Guacamole grilled cheese

Yum!  Today's post is already making my tummy growl.  I love love looooove guacamole and am very excited to share this simple recipe. 
I hope you'll love it too!

Guacamole Grilled Cheese

4 avocados
1 cup diced tomato
1/2 cup diced onion
1/4 tsp cumin
1 lime juiced
2 cloves garlic minced
1/2 cup chopped cilantro
4 slices of bread
1 small block of your favorite cheese

  1. Halve avocados and remove pit.  Scoop avocado into a large bowl (or you can dice the avocado and then scoop it out).  Mash up avocado using a spoon.
  2. Add diced tomato, diced onion, cumin, lime juice, garlic and cilantro.  Stir.
  3. Cut cheese into slices.  Scoop guacamole onto one side of the bread, add cheese and top piece of bread.  Put sandwich on panini press.  Enjoy!
Makes 2 paninis with leftover yummy guacamole to enjoy.  :)

The black tupperware in the back is leftover quinoa that we included in our paninis.
We heard about the benefits of sprouted grains so decided to try this sprouted bread.  The texture of the bread was soo goood!  It can be found in the freezer section of your grocery store.  

Mash away until you reach your desired consistency.

We used fresh mozzarella and sharp cheddar.  We also added leftover quinoa and it was delicious!
No butter needed with a panini press.
