Easy healthy snack for the weekend

These quinoa guacamole tacos, inspired by, are delicious, easy, and healthy. 
Take some of that leftover guacamole,  make quinoa according to the package's instructions, and spoon it onto a Romaine leaf.  We usually have leftover quinoa and guacamole sitting in the fridge, so this is the perfect snack (or light lunch) to whip up during a busy day!
